Celtic managed to equalise through Odsonne Edouard but parity lasted just three minutes before Morelos scored.
Roofe sealed another Rangers victory with a second-half header before Defoe weaved through the Celtic defence to slot home the fourth and hammer home the shift in the Old Firm power balance.
